Banana Bread

2/3 C Butter

1 2/3 C Sugar

2 Eggs

2/3 C Buttermilk

1 1/4 C Mashed Banana

1 1/4 C Bob Mills 1:1 Baking Flour

1 C Cup 4 Cup Flour

1 1/4 Tsp Baking Powder

1 1/4 Tsp Baking Soda

1/4 Tsp Xanthum Gum

1 1/2 Tsp Salt

1 1/2 Tsp Cinnamon

1 Tsp Nutmeg

  1. Preheat oven to 325

  2. Cream together butter (margarine or shortening can be used in replacement), sugar, and eggs until fluffy and smooth. The mixture should be mixed until it becomes lighter in color.

  3. Mix in mashed bananas

  4. Add remaining ingredients and mix well

  5. Split batter between two greased loaf pans

  6. Bake until centre comes out clean with a toothpick

  7. Let cool for 15 minutes and then remove from loaf pans and allow to fully cool on a cooling rack
