Banana Muffins

1 1/2 C Bob Mills 1:1 Baking Flour

1 Tsp Baking Soda

1/4 Tsp Xanthum Gum

3/4 Tsp Salt

1/2 C Brown Sugar

3 Mashed Bananas

2 Eggs

1 Tsp Vanilla

1/4 C Olive Oil

*Optional - 1/2 Cup Chocolate Chips

  1. Preheat oven to 350

  2. Mix together dry ingredients

  3. Mix wet ingredients in seperate bowl (I actually blend the bananas, eggs, & oil together for a smoother texture in a blender)

  4. Fold the wet into the dry just until combined

  5. Divide batter evenly making 12 regular sized muffins (about 3/4 full)

  6. Bake for 12-15 minutes until centres spring back when touched

  7. Let cool in pan for 5 minutes, then remove and let fully cool on cooling rack

  8. ENJOY!
