Chocolate Chip Oatmeal Bars

1 Cup Oat Flour

1 Cup 1:1 Flour (Bob Mills)

1 Tsp Baking Soda

1 Tsp Baking Powder

1 Tsp Sea Salt

1/2 Tsp Cinnamon

2 1/2 Cups GF Quick Oats

1 1/2 Cups Brown Sugar

1 1/4 Cup Melted Butter

2 Eggs

1 Tbsp Vanilla

1 1/2 Cups Chocolate Chips (Optional)

  1. Preheat oven to 350 and grease an 9x13 pan

  2. Put dry ingredients in a bowl and whisk until combined

  3. Add in melted butter, eggs, and vanilla and mix well

  4. Fold in chocolate chips

  5. Place contents into pan and press and smooth it out evenly

  6. Bake for 20-25 minutes (bars will not be chewy if over cooked)

  7. Cool, cut, & ENJOY!

    Freezes well for lunches! I cut them up into bars and individually wrap for easy grab and toss!
