Corn Salsa

Ingredients

4 Roma Tomatos

4 Ears of Fresh Corn (cut off the cob once corn is cooked and ice bathed)

2 Peppers (yellow/red/orange)

1/2 Medium Red Onion (Finely Chopped)

2 Stalks Green Onion (Finely Chopped)

1 Can Black Beans (Drained and Rinsed)

1/3 Bunch Cilantro (Chopped)

  1. Prepare corn first.

  2. While corn is cooking prepare the dressing

  3. Put all ingredients in a large bowl and gently toss with dressing

  4. Chill in refrigerator for a couple hours

  5. Serve with tortilla chips, or on a bed of lettuce with grilled chicken and rice!

Dressing

2 Limes Juiced

1/2 Large Lemon Juiced

3 Tbsp Olive Oil

1/3 Cup Red Wine Vinegar

1 Tsp Oregano

1-2 Tsp Salt (Sea salt or himalayan)
