Fried Rice

1 1/2 Cups Uncooked Basmati Rice

2 Tbsp Olive Oil

1 Cup Frozen Peas

1/2 Cup Cut up Ham Slices

2-3 Tbsp Soya Sauce (we use VH for a GF version)

4 Green Onions Finely Chopped (OPTIONAL)

2 Eggs (OPTIONAL)

1 Precooked and diced Chicken Breast (OPTIONAL)

  1. Prepare your rice according to directions

  2. Rinse frozen peas under hot water for 1-2 minutes to unthaw

  3. Chop up Ham slices into small squares

  4. Heat oil in large skillet and lightly fry the peas and ham (if adding green onions you can put these in as well)

  5. Add the chicken and rice once the ham and peas are cooked

  6. Stir around until mixed thoroughly. If adding eggs you can crack them into the rice at this point and stir around the rice until the egg is cooked. The egg will turn into scrambled egg but in very tiny pieces that are usually not even noticeable to my children so its a bonus for some added protein.

  7. Add the soya sauce and mix it in. Can put in more or less as per preference. My oldest son and I also prefer adding from hot sauce!

  8. Eat as an easy meal for lunch or supper, or as a delicious side! When I use as a side I usually leave the chicken out of the recipe ;-)
