Peanut Butter Cookies

1 Cup Creamy Peanut Butter (not natural)

1/2 Cup Soft Margarine or Butter

1 Cup Brown Sugar

3/4 Cup White Sugar

2 Large Eggs

1 Tsp Vanilla

1 Tsp Salt

1 Tsp Baking Soda

1/2 Tsp Xanthum Gum

1 3/4 Cup Cup4Cup flour or PC Multipurpose Gluten Free Flour Blend

1 Cup Chocolate Chips (Optional)

1/2 Cup Chopped Peanuts (Optional)

  1. Cream butter and sugars with a hand mixer or mixer of choice

  2. Add eggs and beat until mixture lightens in color and turns fluffy

  3. Add in rest of ingredients and mix till blended

  4. Chill dough for an hour(Will produce a chewier centre to the cookies)

  5. Preheat oven to 375

  6. Place cookies on cookie sheet giving some room to expand between cookies

  7. Cook 11-14 minutes until edges are slightly browned or tops start to crack. Don't over bake or cookies will be more crumbly than chewy.

  8. Don't eat too many in one sitting! These also freeze beautifully!
