Potato Wedges

Feeds 4 as a side

3 large Russet Potatoes cut into 1/2" cubes

2-4 Tsp Seasoning Salt

1/4 Cup FINELY grated parmeson (fresh or pregrated)

3 Tbsp Olive Oil

1 tsp Cracked Pepper

  1. Preheat oven to 400 and line a large cookie sheet with parchment paper

  2. Cube your potatoes and pat dry with paper towel or tea towel (eliminating the extra moisture will allow your potatoes to crisp up better)

  3. Coat your potatoes with the olive oil by tossing in a large bowl

  4. Sprinkle and coat potatoes with spices and cheese

  5. Spread on parchment paper as spaced out as possible and stick 

  6. Bake for 15 minutes then take out and flip and put back into oven for another 15 minutes until potatoes are browned and crisp.
