Pumpkin Muffins

1 Cup Pumpkin Puree (room temperature)

1/2 Cup Melted Coconut Oil

1 Tsp Vanilla

2 Eggs

1/3 Cup Maple Syrup

1/2 Tsp Baking Soda

1 Tsp Baking Powder

3/4 Tsp Salt

2 Cups Finely Ground Oat Flour

2 Tsp Pumpkin Pie Spice

  1. Preheat oven to 350

  2. Mix together wet ingredients

  3. Add in dry ingredients and fold mixture until combined

  4. Divide batter into 12 muffins and bake for 18-22 minutes or until they are done in the centre

  5. Let muffins cool before removing from the pan

  6. Store in an airtight container in the fridge or freezer

  7. Great in lunches or a breakfast on the go!!!
