Waffles

3/4 Cup Bob Mills 1:1 Flour

1/4 Cup Cornstarch

3/4 Tsp Baking Powder

1/4 Tsp Baking Soda

1/2 Tsp finely ground Sea Salt

1 Cup Buttermilk

1/4 Cup Milk

1/3 Cup Vegtable Oil

2 Tbsp White Sugar

2 Egg Whites

1 Egg Yolk

  1. Pre-heat your waffle iron so its nice and hot

  2. Whip up egg whites in large bowl until stiff peaks form. Sprinkle the 2 Tbsp of sugar on top and beat for another 30 seconds

  3. Combine dry ingredients in a separate bowl and mix thoroughly

  4. Make a well (make a hole) in the dry ingredients and add the wet ingredients to the well.

  5. Mix the wet ingredients together a little and then mix the rest in...combine wet with the dry. I use a whisk for best results!

  6. Fold in the egg white mixture with a spatula being careful not to over-mix. If over-mixed the waffles will not be fluffy and crisp on the outsides!

  7. Pour desired batter in waffle iron, cook, and ENJOY!

  8. Top with butter, syrup, fruit, custard, etc!
