Wrapped Asparagus

  1. Cut all the bottoms off of asparagus so there is no longer that "woody" textured base (about 1/2 inch)

  2. Cut procuitto pieces in half whichever way you prefer

  3. Place an asparagus at one end of the thin piece of procuitto and with a knife place about 1-2 Tsp of goat cheese along the portion of asparagus that will be wrapped in the procuitto.

  4. Roll up the asparagus (same idea as pigs in a blanket)

  5. Preheat BBQ or grill to medium/high

  6. Place wrapped asparagus directly on grill or a non stick BBQ grill plate and grill for about 5 minutes. Rotate the asparagus and grill for another 5 or until procuitto is crispy

  7. Serve immediately

    *I literally have to put these at the opposite end of the table from my daughter or she will make a meal out of just these...and leave none for anyone else...hahaha
