Zucchini Blondies

Ingredients for Brownies

1 1/4 Cup Oil ( I use olive oil)

2 Large Eggs

3/4 Cup White Sugar

3/4 Cup Brown Sugar

2 Tsp Vanilla

2 C Bob Mills 1:1 Baking Flour

1/2 Cup Finely Ground Oat Flour

2 Tsp Baking Soda

1/2 Tsp Baking Powder

1 Tsp Salt

1 Tbsp Cinnamon

1/4 Tsp Nutmeg

2 C Shredded Zucchini

  1. Preheat oven to 350

  2. Mix oil, eggs, sugars, and vanilla together in large bowl until well combined

  3. Add in the rest of the ingredients except the shredded zucchini and mix well

  4. Fold in shredded zucchini until all large dry areas are mixed in

  5. Pour into a greased 9x13 and bake until centre is done (35-45 minutes)

  6. While cake is baking make the icing....

  7. Whip up the ROOM TEMPERATURE cream cheese with beaters

  8. Add the softened butter or margarine and whip together with the cream cheese

  9. Mix in cinnamon and vanilla.

  10. Slowly add the icing sugar 1/2 Cup at a time and whip. The more you whip the fluffier the icing!

  11. Ice the cake once fully cooled or icing will melt and go runny

  12. Lovely with a cup of coffee and good company!

    Freezes well for lunches if cut into individualized squares and froze separately

8 Ounces Cream Cheese (room temp)

1 C Margarine or Butter (softened)

3 1/2 Cups Icing Sugar

1/2 Tsp Cinnamon

1 1/2 Tsp Vanilla
