Zucchini Brownies

Ingredients for Brownies

1/2 C Oil

1 1/2 C White Sugar

2 Tsp Vanilla

1 C Bob Mills 1:1 Baking Flour

1 C Cup 4 Cup Flour

1/2 C Cocoa

1 1/2 Tsp Baking Soda

1 Tsp Salt

2 C Shredded Zucchini

  1. Preheat oven to 350

  2. Mix flours, cocoa, baking soda, salt, & sugar together in a large bowl

  3. Add oil to dry ingredients and mix together (mixture will be dry and crumbly)

  4. Fold in shredded zucchini

  5. Pour into a greased 9x13 (mixture will seem too dry...this is normal trust me ;-)

  6. While cake is baking make the icing

  7. Melt butter and milk on stove top just until melted. Add the rest of the ingredients and mix till smooth

  8. When cake is cooled off pour on the icing and spread

  9. Try not to eat the whole cake in one sitting....haha

    Freezes well for lunches if cut into individualized squares and froze separately

Ingredients for Icing

6 Tbsp Cocoa

1/4 C Margerine or Butter

1 1/2 C Icing Sugar

1/4 C milk

1/2 Tsp Vanilla
